So this is my sister Rene making one of the best kale salads that I have ever tried. Trust me on this…this is coming from someone who actually hates kale. The only way I eat it is masked in a smoothie where I can’t detect it. Not so after trying this salad!!!!
Here is the recipe:
1 Garlic Clove minced
2 Small Lemons Zested and Squeezed
1/3 to 1/2 cup of olive oil
Kale cut into very small pieces without the ribs/stalks
Toasted Sunflower Seeds or Pecans
1/3 Cup of fresh grated parmesan cheese
Directions: I like to mix everything in a container that has a lid and shake it for a few seconds to really get the dressing dispersed through the salad
This salad is seriously sooooo easy to prepare and makes a great side for any meal. I could eat it daily, even though I normally hate the texture and flavor of kale. She recently served it at a party and all the husbands who had just eaten pizza were getting second helpings of this salad, which is totally abnormal!
