I just took these cookies out of the oven and about died when I bit into them!!!!! I don’t know if it’s just the stage I am at in pregnancy, but OMG. I. NEED. CHOCOLATE! These melt in your mouth and are slightly more healthy and gallbladder friendly than the average cookie seeing as they don’t use egg or butter, but earth balance and water instead. I basically combined two recipes for this and changed some of the ingredients, but my version just so happened to turn out pretty amazing. Here is the recipe:
1/4 c. Earth Balance “Butter” (This is a little bit more friendly on my gallbladder seeing as I have to be careful than regular margarine or butter)
2 Tablespoons oil (I used Sunflower Oil)
3/4 C. Organic Sugar
3-4 Tablespoons Water
1/4 tsp Sea Salt (scant)
1/2 tsp Baking Soda
1 c. Organic Whole Wheat Flour
1/3 c. Organic Cocoa Powder
1/2 tsp Cinnamon
1/4 tsp (little less than) Cayenne Pepper
1/2 c Mini Semi-sweet Chocolate Chips
Cream the earth balance, oil, sugar and 1 T Water until mixed well.
Mix in the remaining 3 T water and beat well
Mix dry ingredients. I sifted them together.
Add to earth balance mixture and mix until combined.
Add chocolate chips at the end.
Chill mixture for a half hour and then preheat oven to 400. Make small 1″ balls with the dough on a greased cookie sheet. Cook for 10 minutes~
This recipe was SO easy and SO very good!!!!! I hope you enjoy these just as much as I did!!!
